Sourdough Double Chocolate Cookies
*Makes 25 cookies*
Ingredients
226 g salted butter
220 g sugar
220 g brown sugar
3 large egg yolks
1 tsp vanilla extract
240 g sourdough starter
380 g organic all purpose flour
25 g cacao powder
1 tsp baking powder
1 tsp baking soda
1 tsp sea salt
250 g dark chocolate chips
250 g milk chocolate chips
Dough Instructions
In a large pan, melt butter and let it brown (careful to not burn it, keep stirring)
Let browned butter cool for 20-30 min
Add brown and cane sugar to cooled browned butter, whisk at medium speed for 2-3 min
Add egg yolks and whisk for 2-3 minutes
Add sourdough starter and vanilla, whisk until mix is fully combined and smooth
Mix flour, cacao powder, salt, baking soda, and baking powder in a large bowl
Add dry ingredients to wet mix, incorporate at low speed
Add chocolate chips. Incorporate at low speed.
Cover dough and refrigerate it for 4-8 hrs
Take dough out of refrigerator, let sit for 30 min at room temp
Make into 70 g dough balls and store them in the freezer
Baking Instructions
When your are ready to bake, preheat your oven to 356F, line a baking sheet with parchment paper and bake dough balls directly out of the freezer for 18-20 min (time depends on how crispy you like your cookies)
Once out of the oven, tap the baking sheet to flatten cookies
Add flaky salt
Let cookies sit on the baking sheet for 3 min
Transfer cookies to a cooling rack
